Turmeric Ginger Dressing

Turmeric and ginger are anti-cancer powerhouses, so why not enjoy them together on salads and other savory recipes? This vegan delight is so good, you just may want to pop a teaspoon of it in your mouth all by itself.

Ingredients

  • 1 clove fresh garlic
  • 1 tablespoon fresh ginger, sliced (about 1 inch of the knob)
  • Zest and juice from 1/2 a lemon
  • 1 teaspoon honey
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • 1/4 cup almond butter, unsalted and no sugar added

Instructions

  1. Peel the ginger with a vegetable peeler, then give it a rough chop.
  2. Place all ingredients in a mini food processor in the order listed. Pulse until thoroughly combined.
  3. For a thinner sauce, add more lemon juice or add water a few drops at a time. For a thicker sauce, reduce the amount of lemon juice.

Notes

You can use any combination of fresh or ground ginger, garlic, and turmeric. For the most intense flavor, use fresh versions of all three. But if you don't have fresh on hand or if you're short on time, use the ground version of one or more of these spices. For garlic, use 1/4 teaspoon garlic powder. For ginger, use 3/4 teaspoon ground ginger. For turmeric, use 1 tablespoon fresh (prepare it as you would the fresh ginger).

Keep in an airtight container in the fridge for up to four days.
