Beet & Citrus Salad

Pair the sweetness of beets, the tanginess of citrus and dark leafy greens for a delicious salad that delivers powerful nutrients for healing and restoration.

Ingredients

  • 4 large beets
  • 4 clementines, tangerines or other citrus fruit, separated into sections
  • 1/2 red onion, finely chopped
  • 2 cups spinach
  • 1/2 cup fresh mint, chopped
  • 1/2 cup crumbled goat cheese, optional, if tolerated
  • 1/3 cup olive oil
  • 3 tablespoons champagne vinegar or white wine vinegar
  • Salt & pepper, to taste
  • Any variety of leafy greens

Instructions

  1. Add the beets to a large pot of boiling water. Simmer until tender, about 40 minutes. Drain and let cool.
  2. Combine oil, vinegar, salt, and pepper to create a dressing. Mix well.
  3. Peel the beets and cut into cubes or slices. Scatter over a bed of leafy greens and add remaining ingredients on top.
  4. Drizzle with dressing and enjoy!
