Nutty Avocado Dip
This healthy, smooth, crunchy dip tastes amazing and makes any raw or cooked veg irresistible.
Ingredients
- 2 cloves fresh garlic
- 1 avocado
- 1/2 cup fresh parsley, packed
- 1/2 cup fresh cilantro, packed
- Juice of 2 limes (roll the limes on the counter with your hand first to unlock the juices)
- 1/2 cup extra virgin olive oil
- 1/2 cup water
- 1 teaspoon sea salt
- 1/2 cup raw unsalted walnuts or pistachios
Instructions
- Place all ingredients except the nuts in a small food processor or high-speed blender
- Pulse until combined
- Add the nuts and pulse until incorporated- just a few pulses to keep some crunch or more pulses for a smoother consistency
Notes
Keep in an airtight glass container in the fridge for up to three days.
