Beet & Citrus Salad
Pair the sweetness of beets, the tanginess of citrus and dark leafy greens for a delicious salad that delivers powerful nutrients for healing and restoration.
Ingredients
- 4 large beets
- 4 clementines, tangerines or other citrus fruit, separated into sections
- 1/2 red onion, finely chopped
- 2 cups spinach
- 1/2 cup fresh mint, chopped
- 1/2 cup crumbled goat cheese, optional, if tolerated
- 1/3 cup olive oil
- 3 tablespoons champagne vinegar or white wine vinegar
- Salt & pepper, to taste
- Any variety of leafy greens
Instructions
- Add the beets to a large pot of boiling water. Simmer until tender, about 40 minutes. Drain and let cool.
- Combine oil, vinegar, salt, and pepper to create a dressing. Mix well.
- Peel the beets and cut into cubes or slices. Scatter over a bed of leafy greens and add remaining ingredients on top.
- Drizzle with dressing and enjoy!
