Lime Rickey

Super refreshing drink, made for long summer days. Make it virgin or adult, it's delicious either way.

Ingredients

  • 3 limes, washed, ends trimmed, cut into eighths and frozen
  • 3 cups ice
  • 2 cups water
  • 1 10oz can sweetened condensed coconut milk
  • Extra lime plus fresh mint leaves for garnish (optional)

Instructions

  1. Add all ingredients to a blender. Blend until limes and ice are broken up, no more than 15 seconds. The more you blend, the more bitter it will taste. Adjust the consistency to your liking by adding more water as needed.
  2. Pour through a fine-mesh strainer or cheesecloth into glasses. Garnish with mint leaves and a lime wedge, and enjoy!

Notes

  • If you don't have time to freeze the limes ahead of time, then use cold limes for a more liquidy drink.
  • Instead of sweetened condensed coconut milk, use one 13.5oz can of coconut milk, 1/4 cup honey, and decrease the amount of water to 1 1/2 cups.
  • For an adult version, add a shot of light rum.
  • Dairy free and gluten free.
