Nutty Avocado Dip

This healthy, smooth, crunchy dip tastes amazing and makes any raw or cooked veg irresistible.

Ingredients

  • 2 cloves fresh garlic
  • 1 avocado
  • 1/2 cup fresh parsley, packed
  • 1/2 cup fresh cilantro, packed
  • Juice of 2 limes (roll the limes on the counter with your hand first to unlock the juices)
  • 1/2 cup extra virgin olive oil
  • 1/2 cup water
  • 1 teaspoon sea salt
  • 1/2 cup raw unsalted walnuts or pistachios

Instructions

  1. Place all ingredients except the nuts in a small food processor or high-speed blender
  2. Pulse until combined
  3. Add the nuts and pulse until incorporated- just a few pulses to keep some crunch or more pulses for a smoother consistency

Notes

Keep in an airtight glass container in the fridge for up to three days.
