Cucumber, Tomato and Mint Salad
A fresh, simple, healthy Mediterranean-inspired salad with mint leaves.
Ingredients
- 2 cucumbers, chopped
- 2 cups cherry tomatoes, halved (or 2 large tomatoes, diced)
- 1/2 cup red onion, chopped (about 1/2 an onion)
- 1/2 cup mint leaves, chopped
- 1/4 cup red wine vinegar
- 1/4 cup extra virgin olive oil
- 3/4 teaspoon sea salt
- Sea salt and pepper, to taste
Instructions
Mix all ingredients in a large bowl. Season with sea salt and pepper, to taste. Garnish with additional mint, if desired, and enjoy!
Notes
- For extra flavor, mix vinegar and salt. Add the cucumbers, stir and refrigerate for one hour. Then add remaining ingredients and toss before serving.
- Variation: add 1/2 cup pitted kalamata olives.
- Variation: add cooked pasta, brown rice or your favorite grain. Add a cooked protein of your choice such as lentils or chicken.
- Additional toppings: fresh herbs such as basil, chives, or parsley.
- Refrigerate leftovers in an airtight container for up to four days.
- Dairy free and gluten free.
